Hi, I’m Hiroyuki Saito— a home cook, comfort food lover, and the person behind Mac the Cheese Truck.

Growing up, some of my happiest memories were built around the dinner table. The rich, gooey mac and cheese my family member used to make. The smell of a slow-cooked stew fills the kitchen on a cold day. These are the flavors that stay with you — the ones that feel like home.

But as I got older, I started paying more attention to what I was putting into my body. I didn’t want to give up the foods I loved — I wanted to find a way to make them better.
